In fact, what you did was to make it the iTunes configuration, so lets go ahead and rename it. OK, so now you’ve updated the Epub configuration. By turning these off and the one above on, you insure that your book is displayed in the reader’s default font except for those places where you really want a different font (such as a chapter heading). This seems to be turned off by default, but you’ll want to make sure that it stays that way. Turn off (uncheck) both “Generate font names” and “Generate generic font names”. Select “None” in “Convert images to JPEG” But styles like “Only nook*”, “Only smashwords*”, etc, are still excluded by this configuration So even though “Only*” is to be excluded, and “Only iTunes*” certainly fits the criteria to be excluded, because it is entered here it becomes an exception to the “exclude” rule. This setting overwrites the previous one. I can then setup the configuration to include the appropriate wording through this option (Paragraphs to exclude) and the next one (Paragraphs to include). In the copyright page I enter both the Smashwords copyright text and the standard copyright text, and apply he Smashwords specific styles to their wording, and a different generic “non-smashwords” style to the other wording. Because the copyright for Smashwords epubs has to be different than the copyright for other vendors, I created a couple of specific Smashwords styles.
Note that this is very specific to my own list of styles ( click here to see what styles I have created). So, what is this? Its a comma separated list of style names that, if applied to a paragraph, cause that paragraph to not be included in the ebook generated by this configuration! Wild cards are allowed, so “Only*” applies to all styles whose name start with “Only”. So I delete the ones I don’t want (but don’t do that yet!) and create new ones for each vendor. Mobipocket is Amazon Kindle, Epub is everyone else (Apple, Smashwords, B&N, etc.), and I have no use for the other ones. By default, Jutoh creates a book with the configurations you see in the screenshot below. To get to the configurations, load Jutoh and open (or create) a book, then select “Edit Configuration” from the “Book” menu. Once you downloaded the file to your computer, you can import it into your Jutoh project.

You can download a copy of ePubMasters configurations here. In other words, you should have one configuration per vendor (Amazon, Apple, etc). Jutoh Configurations allow you to generate an ebook for each vendor.
